The Privileged Life: A Pie-Worthy Day

“You will show me the path of life; in Your presence is fullness of joy; at Your right hand are pleasures forevermore.”Psalm 16:11

My husband, Mark, celebrated 25 years at his office last week. That’s a remarkable accomplishment these days, to stay in one workplace for a quarter of a century.

Mark brings such a compassionate spirit, diligence, and thoughtfulness to his work…he is my everyday hero. I wanted to do something really special to celebrate his faithfulness and efforts. This called for pie! So I made two of them for him to share with co-workers at his office.

My “signature” pie is peach-blueberry. I wish I could take credit for the recipe, but it originated with Betty Odom, the late owner of Blueberry Heaven in Buladean, North Carolina (see last summer’s blog on blueberries— I revise the recipe slightly every year, depending on the sweetness of the peaches. But it’s always a hit…everyone raves about this delectable combination, and it’s even better with a scoop of ice cream. Yum.

You’ll find the recipe below. Give yourself time to make this, and you won’t be disappointed. Sure, you can take shortcuts with store-bought crusts and canned peaches, and it’s still good. But if you make your own pastry and use fresh peaches with newly picked blueberries, you’ll be amazed at the results. Mark’s co-workers were happy to enjoy this pie with him!

There are no Bible references for peaches, blueberries, or pies—although Moses said the manna tasted like pastry when cooked. Psalm 16:11 (above) seems appropriate, too…pie is one of the great pleasures God has given us here on earth. The French translation of this verse refers to “les délices éternelles” or “eternal delights.” I don’t know if there will be pie in heaven, but like manna, it’s a bit of heaven God has given us to enjoy here!

May you be blessed today with a delicious reminder of God’s goodness, the fruits of His Holy Spirit, the bounty of His earthly produce, and the joy of making something special to share with others. May you celebrate His faithfulness every day!

Lord, thank You for sending us Your Son, Jesus Christ, who acted as a Servant to all of us. May we serve others in Your name, faithfully following Your lead to share Your compassion and mercy with those who are hurting or afraid. May we bless them in a small way today with a gift of love. In Jesus’ name, Amen.

  1. The basket-weave lattice top is easier than you imagine! Maybe a little more time-consuming, but not difficult. It’s a perfect option for a pie like this…try it sometime!
